Here are some serving facts about red wine, white wine, sparkling wine and dessert wine.

To chill or not to chill:

White wine: chilled for a few hours in the refrigerator.

Red wine: slightly cooler than room temperature. Younger fruity reds benefit from chilling.

Sparkling wine: thoroughly chilled; refrigerate several hours before serving.

Dessert Wine: room temperature.

Most popular types of wines - their characteristics and what they go well with:

Cabernet Sauvignon is a red wine with cherry, currant and sometimes herbal flavors. It goes well with steaks, stews and hamburgers.

Chardonnay is a fruity white wine. It goes well with everything from fish and poultry to cheeses, spicy foods and nut sauces.

Champagne/Sparkling Wine range in style from very dry (Natural), dry (brut) and slightly sweet (extra Dry) to sweet (sec and Demi-Sec). Many sparkling wines are also identified as Blanc de Blancs (wines made from white grapes) or Blanc de Noirs (wines produced from red grapes).

Merlot is a red wine with flavors of blackberry, baked cherries, plums, chocolate, and mocha. It is a popular choice for smoked meats or fish, olives, aged cheese, and marinated vegetables,lamb, chicken, pork, and rich fish dishes such as salmon.

Muscat actually taste like grapes. Muscats can range from very dry and fresh to sweet and syrupy. It is often served with puddings and chocolate desserts.

Pinot Gris (Pinot Grigio) is a lightly perfumed pear and spice-cake flavored white wine. It goes well with fish, seafood, chicken, pork, and Asian cuisine.

Pinot Noir is a red wine with earthy aromas. It exudes the flavor of baked cherries, plums, mushrooms, cedar, cigars, and chocolate. Goes well with lamb, chicken, pork, and rich fish dishes such as salmon.

Riesling is known for its floral peaches, apricots, honey, and apples perfume. It pairs well with duck, pork, and roast vegetables.

Sauvignon Blanc is a white wine with herbal flavors. It is a popular choice for fish and shellfish dishes.

Shiraz is a red wine that has complex combinations of flavors including berry, plum and smoke. It may complement meals with rich meats.

Zinfandel is a red wine with berry-like or spicy flavors. It pairs well with moderately spicy meat dishes and casseroles.

And, to add a little nostaligia to it all...

World's oldest bottle of wine:

While excavating to build a house in a vineyard near the town of Speyer, Germany, a wine bottle was found inside one of two Roman stone sarcophagus's that were dug up. The bottle dates from approximately 325 A.D. and was found in 1867.
